From my research and tasting, the restaurant that impressed me the most is a Chinese restaurant located in downtown Luang Namtha. This restaurant is just past the Bank of the Lao P.D.R., across the street near the post office, on the right side. The atmosphere is very professional. The chef is a genuine Chinese person who doesn't speak much Lao, but the cooking skills are excellent. Everything I ordered was never disappointing. The stir-fried tofu, stir-fried vegetables, and omelets here are very delicious with authentic flavors familiar to us at home.
I remember the first meal I had there was simple stir-fried tofu and vegetables, but the taste was rich and the ingredients were truly fresh. Just that made me feel like I was eating at home. It opens from evening until around 10 PM or until sold out. The atmosphere is relaxed, perfect for ordering made-to-order dishes while enjoying a Lao beer.
The menu offers a variety of made-to-order dishes. I tried simple dishes like stir-fried vegetables and omelets, and there are many meat options as well. The seller is kind and unhurried, cooking in a chill style typical of the laid-back and friendly Lao people, unlike restaurants in Thailand which can sometimes feel too formal.

If you ask about a proper rice-based breakfast in Luang Namtha, it's not easy to find. Mostly, there are pho shops located across from the Bank of the Lao P.D.R. There are several shops in this area, but not all are equally tasty. I like pho but think Lao pho is delicious only when you season it yourself with the condiments provided by the shop.
Therefore, if you want pho with a flavor you like, you need to know how to season it your own way.
