One thing that impressed me deeply on this trip was the “Phayao breakfast,” which is not just about taste but a way to experience the local lifestyle through morning dishes.

On this trip, I tried many breakfast dishes, starting with “Khao Kan Jin” or grilled sticky rice with pork filling. The taste is slightly sweet and salty, wrapped in fragrant banana leaves. The first bite gives a warm feeling of genuine homemade local food. Then I had “Phayao Khao Soi,” which differs from Chiang Mai’s version by having a less thick curry broth. The flavor is mild but full of local spices and herbs. Eating it in the morning with fresh vegetables and chili paste is absolutely delightful.
