But for mr.hotsia, the latest trip to southern Vietnam led to discovering a strange and fascinating dish called “chicken egg stuffed in grilled bird,” locally known as “egg in bird’s belly,” in Ca Mau province, the southernmost province of Vietnam.

I arrived in Ca Mau city in January. The weather was slightly hot and humid, typical of southern Vietnam. It was also the season when street vendors were bustling with food stalls. I came across a seemingly ordinary grilled bird stall, but noticed the birds’ bellies were unusually swollen. Upon asking the owner, I learned these birds were stuffed with chicken or duck eggs before being grilled until cooked. This is a rare and unique local dish in Vietnam.
