This time, I, mr.hotsia, had the opportunity to visit Vietnam again. One unique impression I want to share is discovering “Preserved Lemon” or candied lemon with a sour and sweet taste, a distinct aroma, and a refreshing flavor unlike any other. It’s like experiencing the life and culture of Vietnamese people through this simple snack.

I found this preserved lemon at a local market that was not clearly specified which province it was in, but the surrounding atmosphere reminded me of the market in Lang Son province that I visited in 2015 (if you want to read stories from that city, seeLang Son Province, Vietnam). Here, the preserved lemons are made fresh right in front of you on the street. Fresh lemons are halved and soaked in syrup until the peel becomes translucent. The taste is perfectly balanced sour and sweet, not greasy. It’s a great snack for those who like something refreshing and light.

What I liked most was the selling method that allowed us to watch the actual making process, not just buying and eating. Here, you can see the shop owner washing fresh lemons, halving them, carefully removing seeds by hand, then soaking them in syrup that is simmered until thick but not overly sticky. This process requires patience and skill because if soaked too long, the peel becomes bitter, and if not long enough, the taste won’t be sweet enough.

I bought some to keep and eat in the morning. The sour and sweet refreshing taste was truly different from the candied lemons I’ve had in Thailand. Interestingly, Vietnamese preserved lemons don’t contain many preservatives or chemicals like some places, making them safe to eat and still retaining the natural lemon fragrance.

The market I visited was similar to the one in Lang Son province, bustling and friendly. Most products were fresh goods, local foods, and seasonal fruits. The atmosphere was filled with lively chatter and the aroma of freshly cooked local dishes. At this market, I found that “Preserved Lemon” is a popular snack that locals love to buy to take home or gift to friends. It’s an easy-to-make treat with a unique taste representing Vietnamese local cuisine. I also saw a relaxed selling style; people here are kind and willing to share stories about the food in a friendly way.
