When it comes to Vietnamese food, many people probably think of pho or banh mi, but for me, mr.hotsia, “grilled duck” is one of the must-try dishes when visiting Vietnam, especially the grilled duck I had the chance to taste in Lang Son, a northern border province of Vietnam that I visited in 2015.

Lang Son is a city with a complex hilly landscape and borders China. Its culinary highlight is grilled duck with a unique flavor and aroma. I arrived in Lang Son during the rainy season; the weather was not too hot, perfect for strolling through markets and tasting delicious street food.

I stayed at Hoang Son Hotel near the central market. Being in the city center allowed me to easily walk out and experience the market atmosphere, and finding grilled duck here was very easy.

I stood watching the duck roasters by the central market near the Ky Cung River flowing through the city center. The grilled duck here is marinated with intensely flavorful but not spicy Vietnamese spices. The taste is well-balanced, the skin slightly crispy, and the meat inside tender and juicy. The duck sauce poured on top enhances the flavor, making this dish my favorite on this trip.

The market atmosphere in Lang Son is full of colors and the chatter of locals shopping. I browsed fresh vegetables, fruits, seafood, and of course, the bustling grilled duck stalls in the evening.
