Hoi An is an ancient town located on the banks of the Thu Bon River, surrounded by colonial-style houses and colorful lantern lights. The town is not very large, but strolling around you will find many cute small noodle shops. I followed the aroma of the well-simmered broth until I found a noodle shop where the owner personally cooks with great care.
The highlight of Hoi An noodles is the clear, mellow broth that is neither greasy nor too salty. The noodles used are mostly thin, white, chewy, and soft, seasoned with Vietnamese spices and herbs such as coriander, green onions, and fresh vegetables sprinkled to add freshness. Every bite delivers a balanced flavor that lingers in the mouth.
