Eating Vietnamese Pho in Đồng Hới, Quảng Bình Province with mr.hotsia
When it comes to Vietnamese cuisine, “Pho” is one of the dishes that I, mr.hotsia, must give a thumbs up and say you absolutely cannot miss. This time, I had the chance to experience authentic pho flavors in Đồng Hới city, Quảng Bình province, or what Thai people simply call “Đồng Hới,” located in the north-central region of Vietnam. This city is not only known for its beautiful beaches and caves but also as a hub of delicious Vietnamese food, especially pho, which I believe is unlike anywhere else.
For this trip to Đồng Hới, I chose to travel by train from Lang Son city. Those who have followed me for a while know that I have shared stories about Lang Son province before, describing it as a border town with a fascinating atmosphere and local cuisine.Read my previous story about Lang Son provinceTraveling to Quảng Bình is very convenient with many train and bus routes. I chose to stay at a small hotel in the city center for easy access to search for great pho restaurants around town.
Street atmosphere and lifestyle in Đồng Hới
One thing I really enjoy when traveling through small towns in Vietnam is the lively street atmosphere. Small eateries line the streets, with locals happily enjoying pho. The fragrant aroma of the broth fills the air, children play on the streets, and vendors chat warmly with each other. It reminds me of the same vibe I experienced in Dalat, with its beautiful Buddhist temples and bustling local markets. If you want to experience the atmosphere of Dalat and Buddhist temples in VietnamI recommend giving it a read.
In Đồng Hới, I wandered through alleys and main streets to try pho at several famous spots. Some were small home-based shops, others were like roadside eateries with old wooden tables filling the space. What they all shared was warmth and flavors that made me smile with every bite.
Pho flavors in Đồng Hới you must try
Pho in Đồng Hới is distinguished by its clear yet rich broth, delicately balanced with local spices and herbs. The broth I tasted showed careful slow simmering without any MSG. The pho noodles were perfectly chewy and soft, with fresh beef or thinly sliced pork blanched just right in the hot broth. Garnished with green onions, coriander, and fresh lime that added a refreshing touch to the bowl.
One of my favorite spots was a small shop on the city’s main street with a steady flow of customers. The elderly owner smiled and told me, “Pho here must be fresh and only use local ingredients.” I tried the tender fresh beef pho and the pork pho, which was wonderfully fragrant with spices.
Besides pho, I also tried other Vietnamese dishes such as grilled button squid, a famous seafood dish in Vietnam that I featured inthe grilled button squid eating clipand Vietnamese chicken biryani, which was equally flavorful.Check out this video for more. The variety of food here made my eating trip full and very impressive.
Morning market and local lifestyle
Besides street pho shops, I also visited the morning market in town to observe the real lifestyle of the locals. This market is where you can see fresh vegetables, seasonal fruits, and many ingredients for local Vietnamese cooking. The market is lively from early dawn until late morning, with vendors and locals shopping continuously.
The morning market in Đồng Hới feels similar to markets I have visited in various Vietnamese cities, such asMukdahan morning marketwhich is full of fresh ingredients and friendly people ready to share stories. This feeling made me feel deeply connected to the authentic life of Vietnamese people.

- Choose pho restaurants popular with locals, as they usually preserve the authentic original flavors best.
- Don’t forget to add fresh lime and fresh chili to the broth to enhance the spicy and harmonious taste.
- Try ordering herbal drinks or Vietnamese iced tea to accompany your meal, which helps enhance flavors and quench thirst.
