Tay People’s Food in Sapa: Flavors and Lifestyle on the High Mountains

I, mr.hotsia, had the chance to travel to Sapa, a small mountain town in northern Vietnam. This place is not only known for its beautiful landscape and cool weather all year round but also as the home of the Tay people, an indigenous tribe with fascinating traditional culture and lifestyle, especially their cuisine which I intend to share based on my real experience.

Ban Ho in Sapa is a small village I visited where I tasted authentic Tay food that still uses local ingredients and traditional cooking methods with great care. Tay cuisine mainly focuses on fresh ingredients from the forests and fields such as sticky rice, river fish, local vegetables, and native herbs with unique aromas.

Flavors and Ingredients: A Fascinating Difference

What impressed me most was the taste of the food, which is similar to northern Thai cuisine but with subtle differences, such as the use of a wider variety of herbs and spices. For example, Thai basil leaves are used in almost every Tay dish. They ferment fish with salt and herbs to achieve a sourness and aroma that is distinctive, slightly different from our Thai fermented fish.

The dishes I tried at the Tay home included sticky rice wrapped in banana leaves, served with fresh vegetables and chili paste made from dried chili and wild garlic grown locally. The flavor was spicy yet balanced. Another must-try is the “Herb Braised Fish Curry,” made with fish from nearby streams mixed with homemade herbs. It has a mellow taste and fragrant aroma from kaffir lime leaves and galangal.

Tay Lifestyle and Food Closely Connected to Nature

Eating for the Tay people is not just about taste but also reflects a lifestyle closely dependent on nature. Many of the vegetables I ate were homegrown in backyard gardens or gathered from nearby forests. Their cooking traditions include selecting seasonal ingredients and preserving food using old methods like drying, fermenting, and salting.

I remember once at a Tay home in Sapa, I was invited to help prepare food with the local cook. I witnessed the process of steaming sticky rice in a clay pot, wrapping food in banana leaves to preserve aroma, and using charcoal stoves instead of electric heat to get just the right temperature. Everything was slow and deliberate, as if preserving the value of food and family bonds.
