Many times when I traveled to different provinces in Vietnam, whether it was Lang Son city (Lang Son Province, Vietnam) or Dalat city with its beautiful Buddhist temples (Buddhist temple in Dalat city), I usually started my day by roaming the morning markets or street stalls where locals prepare food from early dawn.

Vietnamese breakfast is diverse and varies by region, but what they share is freshness and balanced flavors. I vividly remember walking through the morning market in Ha Tien, a small town near Vietnam's southern border. Here, breakfast focuses on fragrant grilled pork rice and large bowls of smooth, flavorful Vietnamese porridge.

For me, walking through alleys off the tourist path is important because it lets me see the real lifestyle of Vietnamese people. Whenever I find a shop where locals eat, I never hesitate to try it. Sometimes, I stop to sip strong Vietnamese coffee at small street cafes in Dalat (Coffee shop in Phan Rang) or in Lang Son city. The coffee here is different from elsewhere, with a unique style I really like. Sitting and sipping hot coffee with fresh breakfast makes me feel more connected to the Vietnamese way of life.

When I stayed in Lang Son city, I chose Hoang Son Hotel, located near the morning market. It was just a few minutes' walk to my favorite spots for grilled pork rice and Vietnamese porridge. Not only was I full, but I also experienced the genuine local atmosphere.
