On this trip to Laos, I intentionally searched for roadside grilled duck sold like the locals eat, not in fancy restaurants or resorts. I found a roadside grilled duck stall in the late afternoon when the sunlight was soft. The small shop had rows of grilled ducks on the charcoal grill, with a fragrant aroma spreading all around, making passersby stop to watch and order. The owner, a kind uncle, smiled and explained that he marinates the duck with authentic Laotian herbs such as galangal, lemongrass, kaffir lime leaves, and homemade chili powder. The duck, slowly grilled over wood charcoal, has crispy skin but tender, juicy meat. The spices soak into the meat, almost melting in your mouth.
What makes Laotian grilled duck different from grilled duck I've had in Thailand is the simplicity yet perfection of the ingredients and preparation, as well as the serving style that is not fancy but feels like eating with neighbors by the roadside. mr.hotsia recommends eating it with hot sticky rice and the shop’s own spicy jaew dipping sauce, which enhances the grilled duck’s flavor many times over.
