Larb Bon, Spicy Long Bean Salad, Buffalo Skin: The Flavors of Ban Tha Suang, Muang Hongsa, Laos
I, mr.hotsia, had the opportunity to slowly cruise from Huai Sai towards Ban Tha Suang in Muang Hongsa, Xayaburi Province, Laos. This route is filled with the beautiful nature of the Mekong River and surrounding mountains. This journey was not just about sightseeing but also experiencing the true local lifestyle and authentic flavors of Ban Tha Suang villagers up close, especially the signature dish called “Larb Bon, Spicy Long Bean Salad, Buffalo Skin,” which I want to share in this article.
Ban Tha Suang, locally pronounced “Tha Suang,” is a small village by the Mekong River with about 40 households and over 100 residents. It is peaceful and friendly. I stayed at a homestay at P’Porn’s house, who is my friend and relative. The price including three meals a day was only 200 baht. The atmosphere here is simple, with smiling locals ready to share stories about life by the Mekong River in a warm and welcoming way.
Larb Bon: The Fragrance and Authentic Taste of Laos
The first dish I tried was “Larb Bon,” made from fresh taro cut into large pieces, marinated with local spices and herbs, then wrapped in banana leaves and grilled over charcoal until fragrant. The unique aroma of taro mixed with the scent of spices and charcoal smoke makes this Larb Bon irresistibly charming. The taro’s flavor is different from the usual taro in Thailand; it is soft and naturally sweet with a slight crispiness from perfect grilling.
Spicy Long Bean Salad: The True Sour and Spicy Lao Flavor
Another must-try dish is the “Spicy Long Bean Salad,” which differs from the familiar Thai papaya salad. Here, fresh long beans are pounded together with dried chili, garlic, fish sauce, lime juice, and palm sugar. The taste is a perfect balance of sour, spicy, salty, and sweet. Most importantly, the fresh crispness of the long beans makes this salad very enjoyable and refreshing, pairing perfectly with hot sticky rice at Ban Tha Suang.
Fried Buffalo Skin: The Crispy and Rich Must-Try
The last dish that impressed me was “Fried Buffalo Skin.” The buffalo skin is marinated with spices and fried until golden and crispy. Each bite is crunchy with the deep flavor of the spices absorbed into the skin. The richness of buffalo skin combined with its crispiness offers a distinctly different eating experience from regular fried pork skin. I ate it together with the spicy long bean salad and Larb Bon, and I must say the combination of these three dishes is truly unforgettable.
Life by the Mekong River and Local Cuisine
Ban Tha Suang is located by the Mekong River, an important river cruise route in Laos. I cruised slowly from Huai Sai, stayed one night at Pak Bang, then took the only boat of the day at 9:30 AM to Luang Prabang. After about an hour, I arrived at peaceful Ban Tha Suang surrounded by abundant nature. Staying at P’Porn’s homestay gave me the chance to talk with locals, hear folk tales about the Suang rock standing tall in the Mekong River, and learn about the lifestyle closely tied to the river.
