If I were to recommend a city to try fresh, hot Burmese crispy pork, it has to be Loikaw City, Kayah State. The atmosphere along the streets in this town is filled with small eateries where the aroma of crispy pork smoke lingers in the air. Anyone who loves crispy pork with a crunchy outside and tender inside must not miss this.
I arrived in Loikaw in the late afternoon after a bus ride from Yangon and passing through Kachin State, famous for Indawgyi Lake (read more atIndawgyi). The air felt fresher and quieter than I expected. This town is not chaotic but full of the lively spirit of hardworking locals.
Walking along the main street, I found small roadside shops displaying delicious crispy pork. The cooks prepare it fresh on the spot. The crispy pork here is fried without excess oil, crispy and fluffy to the point it almost melts in your mouth. The pork skin is beautifully golden, with a slightly salty and mildly sweet taste. Unlike the crispy pork I’ve had in Thailand, this has a subtle Burmese spice aroma. The meat inside remains juicy, not too dry.
I ordered crispy pork served with hot steamed rice and a Burmese dipping sauce that balances sour and sweet flavors perfectly against the pork’s richness. Fresh vegetables and fresh chili are also available to add as you like. For those who enjoy spicy flavors, feel free to add more chili.
Interestingly, the roadside eateries in Loikaw are not like typical tourist spots filled with foreigners. These are genuine local Burmese restaurants. I had a chance to chat with the owner, a native Kayah, who told me the crispy pork recipe has been passed down through many generations in their family.
