Burmese Rice Noodles, delicious from the heart by mr.hotsia

When talking about Burmese food, mr.hotsia must say that “Burmese Rice Noodles” is one of the dishes that impressed me the most during my trip to this country. Burmese rice noodles are clearly different from our local rice noodles in color, taste, and the culture hidden in this dish. Every time I taste it, I feel like I am traveling deep into the true lifestyle of the Burmese people.

Burmese rice noodles are served with a rich broth, a balanced spicy and hot flavor, and a curry made with various spices, accompanied by fresh vegetables and crunchy bean sprouts. There are side dishes like boiled eggs and various meats. Especially in local markets or street stalls in Nyaung-U city, I tried rice noodles at a small shop opening early by the morning market. The aroma of spices floated from the entrance, making me unable to resist ordering a taste immediately.

This journey to taste Burmese rice noodles by mr.hotsia happened while I visitedKachin Statewhich is the source of the great Irrawaddy River. This river is not only the natural heart of Myanmar but also deeply connected to the culture and cuisine of the local people. I rented a motorcycle from my accommodation in Myitkyina city to ride through roadside villages. There, I saw locals preparing fresh ingredients for making Burmese rice noodles, including fermented rice used for the noodles and curry paste made with local herbs.

Burmese rice noodle strands are slightly softer and chewier than our local rice noodles, giving a fuller mouthfeel when eaten. The Burmese curry is noticeably spicier than ours. The heat from chili mixed with herbs like galangal, lemongrass, and culantro creates a refreshing and warm feeling on a cool day in Kachin State.

Interestingly, in some areas of Myanmar, such as around Indawgyi Lake, which I have written about ina previous articleBesides the beautiful lake views and the Red Tai and Kachin communities who own the area, local food like Burmese rice noodles is also part of the warm breakfast prepared by locals for travelers and tourists who visit.

I clearly remember once sitting to eat Burmese rice noodles at a small roadside shop in Nyaung-U city. The atmosphere was filled with loud vendors calling customers, horse-drawn carriages serving as excellent transportation in the city,Riding a horse carriage in Bagan, Paganpassing by. Sometimes the carriage drivers would get off to buy Burmese rice noodles from this shop to take home. This made me truly feel that Burmese rice noodles are deeply rooted in the daily life of the Burmese people.

One thing I really like is the simplicity of eating Burmese rice noodles, which can be enjoyed anywhere, anytime, whether breakfast or dinner. I recommend trying Burmese rice noodles served with fish curry or meat curry made from fresh ingredients from Indawgyi Lake and northern Myanmar for a richer and more balanced flavor.

During my visit to the morning market in Pathein city by the Irrawaddy River, famous for its riverside market,Irrawaddy Riverside Market, Pathein cityI also found Burmese rice noodles sold by locals on small wooden stalls with carefully prepared side dishes. Some shops offered fish curry made from Hilsa fish, which is an important fish in Burmese cuisine and neighboring countries around the Bay of Bengal.

mr.hotsia wants to recommend everyone who has the chance to visit Myanmar to try Burmese rice noodles at least once. If you have enough time, I suggest following my route to Kachin State and Indawgyi Lake. Besides enjoying beautiful nature and the authentic lifestyle of the Burmese people, you will also experience flavors of food found nowhere else in the world.
