HotSia.com quietly launched in early 2010. I stayed in Lampang to build the website, gathering information and organizing content about various countries, focusing on exciting travel in Thailand, Cambodia, Laos, and Vietnam. Since early 2010 until early March when I wrote this, the weather was still cold. No need for air conditioning at night. Let's talk about the local food in Lampang city. For breakfast, if you want ready-made food that requires no further cooking, you can eat it right away.

You should visit the early morning market 'Kad Asawin.' Kad Asawin opens at dawn, offering rice porridge, pork blood soup, and meals for just one baht per bag. Very affordable. For lunch, noodle shops are located right in front of Kad Asawin, about two or three shops. I recommend 'Asawin Chuan Chim' and some on the outskirts like 'Kru Thum Noodles,' which I have already introduced. When evening comes, the night market is also at Kad Asawin, focusing on various dishes.

Fresh food to cook at home. At HotSia.com, we don't focus on cooking ourselves; we look for delicious curry rice shops to buy from. I found one shop that I really like. Southern food near Lampang Bus Terminal. This shop offers many delicious curry rice dishes, a nice atmosphere, cozy and cool, not hot. It's hard to find curry rice in Lampang like in central provinces. The only curry rice shop I know in the city center area

is this one. There might be others, but I haven't found them. Another thing is that in Lampang, between 2 and 3 PM, it's very hard to find food because lunch shops close and dinner shops haven't opened yet. But it's not that Koboy is the only good shop. Actually, there are many trying to open, but if the food isn't good, it's hard to survive. During the day, locals eat Khanom Jeen Nam Ngiao or Kanten Jin Rice.

Or som tam with grilled chicken at Pa Khan's shop. So, there aren't many curry rice shops. Southern Cuisine Koboy is located on the main road in front of the bus terminal. If you exit Lampang Bus Terminal and turn left about 300 meters, Koboy is on the right. Koboy is a two-unit corner shop with about 10 tables. They serve Southern dishes like sour curry, spicy minced pork curry, bamboo shoot curry, shrimp paste chili sauce with fresh vegetables, which are standard in Southern restaurants.

Besides Southern food, they also have Central Thai dishes like braised eggs with pork, mackerel, tom kha soup, spicy mackerel curry, sweet pork, bitter melon soup, Khanom Jeen Nam Ya, and many more. The Southern dish I highly recommend and is very delicious is the mackerel. Koboy buys fresh mackerel from a cold storage in Bangkok, so the fish is fresher than elsewhere. The mackerel meat is firm, sweet, and tasty. Sweet boiled mackerel is cooked every Sunday night and available only on Mondays. If you're lucky and come on Tuesday, you might get some.

But mostly it's gone by Monday. The sweet boiled mackerel here is delicious; you can eat the whole fish, even the bones dissolve completely. Eating the cheeks with fresh vegetables is incredibly tasty. I must praise the cook, Koboy's mother. She is from the South and understands the art of cooking, making the sweet boiled mackerel so delicious. 'Southern food comes from many provinces. We make it moderately spicy so everyone can enjoy it. We cook it well enough,' says the owner, Pa.

He is very humble, but his food is not just 'well enough.' It's top-notch. I chatted with Pa several times and learned he came from Nakhon Si Thammarat and has lived in Lampang for decades. He first sold food at the Teacher's College, now Lampang Rajabhat University, before moving to the current shop. Authentic Southern food made by Southerners is a must-try. Besides delicious Southern food,

there are also tasty desserts. I'm not just saying this ceremoniously; they have them, and you should try. Their crispy tubtim in coconut milk is extraordinary—not too sweet or bland. The taste is just right with palm seeds, coconut, and syrup. It's refreshing and delicious with a chewy texture. The bamboo shoot sour curry with mackerel is excellent. Jelly in syrup is definitely delicious.
