Pa Lek's Ayutthaya Boat Noodles: Taste the authentic flavors of the ancient capital

When talking about Ayutthaya, many people think of ancient temples, historic ruins, and grand history. But for me, mr.hotsia, Ayutthaya is not only about cultural tourist spots. The food here is equally impressive, especially “Pa Lek’s Boat Noodles,” a boat noodle shop where I experienced the true taste of Ayutthaya on my latest trip.

My trip started at Ayutthaya train station after a long free train ride from Chiang Mai passing Lampang, Uttaradit, Phichit, and Lopburi until arriving at Ayutthaya, a city charming with stories and local cuisine. I planned to find local dishes recommended by locals, and “Pa Lek” was one place I didn’t want to miss.

Pa Lek's Boat Noodles is located in Ayutthaya’s old town, easily accessible. Those who have been to Ayutthaya might know it well. The shop is not large or fancy but full of warmth like dining at a friend’s home. Pa Lek and her team serve with smiles and friendliness that make you feel like old friends.

The aroma of the broth is strong, mixed with sweetness from boiled bones and carefully simmered spices, making me eager to order the first bowl immediately. The noodles here are thin, chewy, and just right. The broth is rich but not overly salty, served with large beef and pork meatballs. The taste I’ve had elsewhere never compares to here.

A flavor that shows Ayutthaya boat noodles are unique

The highlight of Pa Lek’s boat noodles is not only the rich broth but also the balanced flavor from well-adjusted seasonings, including chili powder, vinegar, palm sugar, and fresh vegetables generously provided to add as you like. I like to add fresh bean sprouts, shredded cabbage for crunch, and sprinkle fragrant holy basil leaves. This is the true Ayutthaya boat noodle experience.

For those who like strong flavors, the shop also offers a special chili paste to enhance the taste. I went all out without holding back. One bowl is never enough; I had to order a second and even a third bowl.

Ayutthaya is more than just boat noodles

After a satisfying meal at Pa Lek’s boat noodles, I also recommend friends to exploreAyothaya Floating Marketwhich is currently the trendiest floating market in Ayutthaya. The market has a retro atmosphere, shops decorated in an old-fashioned style, and rowing boats floating around. It’s crowded but very lively. Don’t forget to try other local foods at the floating market as well.

If you want to experience the lifestyle of Ayutthaya people clearly, I recommend trying the “Khop” local transport, which is colorful and unique. Riding a Khop around Ayutthaya’s old town is an experience I, mr.hotsia, really enjoy. Temples and Attractions to Visit After Eating

For those who love temple visits, Ayutthaya offers many interesting temples to explore, such as Wat Yai Chai Mongkhon, Wat Phra Ram, or my personal favorite,Wat Na Phra MeruThe last temple that was not burned during the Ayutthaya period. This temple has a principal Buddha image that looks different from others, resembling Burmese style. Anyone who loves photography or history must not miss it.

Don’t let the midday heat ruin your fun. I, mr.hotsia, recommend waking up early to visit temples first, then stop by Pa Lek’s boat noodles around mid-morning or noon to recharge, followed by a stroll at Ayothaya Floating Market in the afternoon.
