The food here clearly reflects the lifestyle of the Mekong Delta people. mr.hotsia starts with a legendary southern Vietnamese dish called “Nem Nuong” which in Can Tho has an authentic original recipe, different from what you might have tried in Thailand or northern Vietnam. The pork for nem nuong here is shaped and grilled on skewers with a distinctive aroma. The vegetables used are not as varied as at home, but interestingly, “raw banana” plays a starring role adding a unique flavor. The way to eat it is to wrap the pork and vegetables in a thin rice paper sheet and eat it whole. mr.hotsia really likes it because the taste is balanced, not greasy, and refreshingly complemented by the vegetables and raw banana.

The flavor is slightly sweet, grilled until the pork skin is crispy and fragrant with betel leaves in a way never experienced before. This dish is easy to eat and perfect for a casual stroll through the market.

Another dish that impressed me is “Sticky Rice with Fried Chicken Topping.” The sticky rice here is soft and chewy just right, topped with small hot pieces of well-seasoned fried chicken. Served with a sweet and sour dipping sauce, every bite is full of balanced and harmonious flavors. It’s easy to find this dish at fresh markets or floating markets.
