Hanoi, the capital of Vietnam, where I, mr.hotsia, have traveled many times. I can say it’s not just an ancient city full of history but also a true paradise for street food lovers, especially two signature dishes:Pad See EwandRad NaHere, they make these dishes so flavorful that I had to stop eating multiple times on each trip.

The last time I strolled through the walking street and local markets of Hanoi, the aroma of Pad See Ew blending rich dark soy sauce, chewy noodles, and large pieces of pork or chicken stir-fried to fragrant perfection still lingers in my memory. The special thing about Hanoi’s Pad See Ew is that the noodles are thinner than the wide noodles we have at home, stir-fried with concentrated dark soy sauce until the noodles turn a beautiful black color with a perfectly balanced salty and sweet taste.
