When talking about Northern Vietnamese food, “Hotpot” is one of the dishes I, mr.hotsia, must say you absolutely cannot miss. Especially when visiting Sapa town in Lào Cai province. This place is not only a beautiful natural tourist destination but also a fascinating hub of local food culture.

Northern Vietnamese hotpot differs from the sukiyaki-style hotpot we are familiar with at home. The broth is complex and includes many rare ingredients such as starfruit, which gives a uniquely refreshing sour taste. I have tried making this recipe at home but admit the flavor is not as good as eating it in Vietnam. In short, the atmosphere and fresh ingredients in Sapa make the taste much more special.

Where to eat hotpot in Sapa: Corner of the stadium area

If you want to eat hotpot in Sapa, I recommend going to the corner of the stadium area in town. There are many local restaurants popular with Vietnamese locals as well as Vietnamese tourists who come to taste the food. These restaurants offer English menus to make it easier to choose. Hotpot sets come with a choice of meats including beef, pork, chicken, or fish, along with fresh vegetables—Vietnamese people are famous for their generous vegetable servings.

What I noticed is when a restaurant has many Vietnamese customers, it’s a sign that the place is delicious and worth it—not just cheap but authentic in flavor.

Hotpot broth recipe recommended by mr.hotsia

The broth is the heart of Northern Vietnamese hotpot. I recommend trying the freshwater salmon head hotpot in Sapa. The broth is made with fresh ginger, tomatoes, starfruit, pork bones, and finely sliced shallots—five whole shallots—to add sweetness and a perfect aroma. Sweet potato, taro, and lemongrass are also added to deepen the broth’s flavor.

I have tried making this recipe at home but it’s not as tasty as in Sapa because of the fresh ingredients and authentic Vietnamese cooking methods. Here they use freshwater salmon with a special sweet and tender flavor. Once you have the broth, place the hotpot on a small stove, add the fish head and fresh vegetables, wait until cooked, then dip and eat with steamed rice or rice noodles as you like. It’s so delicious you have to give it a thumbs up.

Visiting Sapa is not as difficult as you might think. I once took the train from Yen Bai province to Lào Cai, then a van from the train station to Sapa.
