Fermented Fish Sauce Noodle Soup in Sóc Trăng, Southern Vietnam

When talking about fermented fish sauce noodle soup, many might think of the famous local dish “Khao Pun Nam Jaew” from Chiang Khan market in Thailand. But did you know that this fermented fish sauce noodle soup also has deep roots and popularity in southern Vietnam, especially in Sóc Trăng province? I, mr.hotsia, had the chance to experience the authentic taste there myself.

Sóc Trăng province is a coastal province located in the Mekong Delta, about 240 kilometers from Ho Chi Minh City. Getting here is not difficult, with several bus companies operating routes. The Sóc Trăng bus station is also not far from the city center. Read more about this province atSóc Trăng Province Travel Information

I traveled to Buu Son Tu (Clay Pagoda), where I encountered the famous fermented fish sauce noodle soup of the area. Buu Son Tu is an ancient temple with beautiful Khmer-style architecture and a peaceful atmosphere, perfect for relaxing and observing the local life in Sóc Trăng. In the morning, monks walk past the temple for alms, and I sat sipping coffee by the roadside watching people pass by. I saw elderly people respectfully praying with their hands clasped, which deeply connected me to the local culture.Read more about Buu Son Tu Temple

The fermented fish sauce noodle soup here differs from what I’ve had in Thailand in that the broth contains fermented fish sauce, locally called “jaew,” which gives it a fragrant and rich flavor. The broth is intense but not greasy. The noodles are cooked just right, not too soft. The taste I experienced was perfectly balanced—spicy but not overwhelming, with a clear fermented fish sauce flavor. The variety of offal includes fish, pork, and chicken, with chicken being especially popular in Sóc Trăng, unlike nearby Bac Lieu province where fish heads are preferred.

The noodle shop I visited near Buu Son Tu is small but always crowded. It’s clear this is not just an ordinary eatery but part of the community’s way of life. I remember there was also a grilled pork rice dish called “Giem Tum” sold alongside. Even locals often order both dishes in the same meal, adding variety to their dining experience.

After eating, I rested by the roadside in front of the temple, watching people come to pray and pass by. I witnessed the simple life here, unhurried compared to big cities. This atmosphere reminded me of a journey filled with deep connections and fond memories I will never forget.

Local Life and Cuisine in Sóc Trăng

Besides delicious fermented fish sauce noodle soup, Sóc Trăng province has a unique cultural identity, especially with nearly 30% of the population being Khmer people. They have darker skin and features similar to Khmer people in Cambodia. I had the opportunity to chat with them at the night market, which was lively and colorful with local food offerings.

Another dish I really enjoyed is “Sticky Rice with Duck,” a popular Sóc Trăng specialty. The sticky rice here is different from the coconut milk sticky rice we know; it’s topped with a special seasoning sauce, crispy fried duck, and duck offal options. The flavor is rich, salty, and sweet. I recommend trying it near the Sóc Trăng market area to truly experience the taste and local atmosphere.Read more reviews about Sticky Rice with Duck

For travelers who are not used to local food, I suggest stopping by the Coop supermarket, not far from the city center. They offer standard snacks like Vietnamese pork sausage, fermented pork, and various sausages that you can buy as light meals or snacks. It’s convenient and helps keep your trip smooth without food worries.

Travel and Continuing Trips

I traveled to Sóc Trăng from Bac Lieu city by bus operated by Mai Linh company, which I recommend for good service and frequent departures. Traveling between provinces in southern Vietnam is very convenient. If you want a closer experience of local life, I suggest trying a motorbike ride or a ferry crossing the river connecting to nearby Tra Vinh province. You can clearly see the vast Mekong River and the simple life of people living on boats.Read about traveling from Sóc Trăng to Tra Vinh

Closing Remarks by mr.hotsia

For me, fermented fish sauce noodle soup in Sóc Trăng is not just a dish but a small gateway revealing the culture and lifestyle of the local people. The aroma of fermented fish sauce, the rich broth, perfectly cooked noodles, and eating in the atmosphere of Buu Son Tu temple complete my travel memories perfectly.
