The local food I noticed being sold in many shops is shredded chicken sticky rice. I was also impressed by the curry rice shop at the traffic light intersection, where they sell food directly to passing motorbikes. I enjoyed my visit.
Since this province is a tourist destination, there are many places offering Western-style food. If you prefer that, there are several riverside restaurants to choose from.
