When it comes to the daily food of Cambodian people, “Khmer curry rice” is one of the dishes I, mr.hotsia, consider the clearest reflection of life and culture. The last time I traveled to a small town in Cambodia, the province was not clearly specified, but the atmosphere and flavors I experienced remain unforgettable.

The Khmer curry rice here is not as complicated as in fancy restaurants but is full of deliciousness from fresh ingredients and the skill of street vendors. Khmer curry comes in many types, including beef curry, fish curry, and vegetable curry, but my favorite is the coconut milk curry with moderate spices. The curry rice stalls I found in Ta Kaew Province were mostly small shops located next to markets and roadsides. Some had few tables and chairs, but the warm atmosphere and the aroma of curry spices made me stop and taste without hesitation.

What makes Khmer curry rice different from ours is the use of different spices and herbs, such as turmeric and lemongrass, which give the curry a golden color and unique aroma. The meats used vary from pork, chicken, to fresh Mekong River fish caught daily.

The market atmosphere, with vendors speaking the local language and smiling, made me feel deeply connected to the real life of Khmer people.
