When traveling, try eating near the market. Look for made-to-order dishes like Bai Cha or Khmer fried rice—you'll enjoy them. For dinner, eat like the locals in Kampong Cham: try som tam (papaya salad), fried chicken by the Mekong River, or stir-fried noodles at the night market. The atmosphere is great. One food item I saw sold in many towns is small sun-dried snails. Passersby often taste them, and if they like them, they buy some. I haven't tried them yet, but they must be delicious. If you get a chance, try them. They are sun-dried on bamboo trays and sold widely.
I haven't tried them because after a severe stomach upset on my last trip, I am cautious about what I eat. I did try ordering food at the market during the day, where many locals from Kampong Cham eat. I must say that everywhere I went, people could speak Thai, so don't speak ill (which you shouldn't do anyway). When I ate, I met Thai speakers and ordered various dishes from food stalls. The food is similar to Thai cuisine and was acceptable to me.
