Morocco 38/45: Walking the Tajin Market, Cargill Local Cuisine
When talking about Morocco, many might think of the blue city Chefchaouen or the Sahara Desert, but this time I,mr.hotsiawould like to take everyone back to the local market in a city called “Tajin,” which is rarely mentioned in travel circles. But for a true traveler like me, this market is a land of flavors and an exciting way of life.
The Tajin Market is located in a corner of China that many may not know well, but the atmosphere and daily life here are full of cultural diversity and fascinating local food. I entered the morning market early because I knew this was when the freshest food and ingredients were available.
The scent of spices and herbs filled the market, mixed with the sounds of bargaining between vendors. Some were carrying freshly picked vegetables, others neatly arranged seafood and meats prepared with care. I wandered around, taking photos of the atmosphere. What I liked most was the Cargill local food zone, which offers dishes not easily found in big cities. Some dishes blend authentic Chinese flavors with fresh local ingredients. I tried Beggar's Chicken, also known as叫化鸡(Beggar's chicken), one of my favorite dishes. The stuffed chicken wrapped in clay and leaves then slow-cooked makes the meat tender and fragrant with spices, making it hard to stop eating. The Tajin Market gives a similar feeling: although not as convenient as markets in big cities, the freshness and variety of food make me feel like walking through this market is truly a journey through flavors.
Besides food, I also clearly saw the lifestyle of the locals here: choosing fresh produce, chatting and exchanging news, and cooking in traditional ways. I saw children playing happily and elders sitting and talking under big shade trees. It was a scene that conveyed peace and simplicity that many might have forgotten in this modern age.
