Speaking of Chinese street food, noodles are almost the heart of deliciousness in many cities I passed through. Every time I walk past small noodle shops by the roadside, I see locals sitting in a row enjoying their meals. Some shops I tried have stir-fried eel noodles like in Zhanghua Province mentioned earlier. The chewy noodles combined with rich broth and fresh vegetables, shredded pork, or perfectly boiled meat make every bite full of the joy of authentic Chinese eating.
