Arriving here feels like stepping back in time to experience the warm and sincere atmosphere of a traditional morning market that remains unchanged.

On the first morning in Myitkyina, mr.hotsia wasted no time and quickly explored the main street of the city to find “Khao Soi,” a familiar breakfast dish with an extraordinary taste in Myitkyina. The Khao Soi here is distinctly different from what I have eaten in northern Thailand, featuring soft, smooth thin noodles and a rich, mellow broth with a slight spiciness, hiding the aroma of Chinese spices and dried chili perfectly blended with the fragrance of coconut milk.

The Khao Soi shop I found was on a small street at the Myitkyina morning market. The atmosphere was filled with the sounds of conversations and the aroma of food wafting to the nose. The image of a middle-aged female vendor carefully preparing Khao Soi by hand made me feel like I was tasting the dedication and love for this local dish. This bowl of Khao Soi was served with fresh crunchy vegetables and a wedge of lime that added freshness to the breakfast.
