An expert told me that this is Beggar's Chicken. I once read on a website that in the past, the whole chicken, including feathers, was covered with clay and then baked. When cooked, the clay was removed, and the feathers came off with it, leaving the chicken fragrant and delicious. The restaurant I visited nowadays uses a much more complex method; they don't take the clay from the front of the shop to get the chicken out. The chicken is like it has been roasted and then chilled before being seasoned for us to eat. I tried it, and it tasted oily and rich, which I didn't quite like.

Additionally, back when I was farming, if we had many large snakehead fish, we would cover the whole fish thickly with clay and throw it into a straw fire. When cooked, peeling off the clay would also remove the fish skin. The fish would turn yellow, fragrant, and very delicious with fresh, sweet meat. I still remember it; it’s probably similar to the Chinese Beggar's Chicken. But if I had to choose, I prefer the clay-baked snakehead fish because it tastes great.
