Assam is located in northeastern India. It is a state characterized by mountains and dense forests. The humid climate and mineral-rich soil are ideal for cultivating high-quality tea. My journey began by connecting with locals in a small village who still carefully handpick tea leaves. The uniqueness of the plantations here lies in the variety of tea species and the picking methods, which affect the flavor in the cup. The villagers explained the importance of selecting only the tender top leaves to ensure the tea is fragrant and not bitter.
While walking through the tea plantations, I saw local women dressed in traditional attire skillfully carrying baskets to pick tea leaves. Here, it’s not just tea that’s interesting but also the Tai Phake community, a small ethnic group that has lived in Assam for a long time. The Tai Phake people strongly preserve their language and culture. I had the chance to visit the old Tai Phake village, which was a valuable experience because I witnessed rituals and a simple yet meaningful way of life. Importantly, I also tasted local dishes with mild flavors made from truly fresh local ingredients.

Besides tea and Tai Phake culture, I also stopped by a local market in Assam, filled with a variety of fresh and dried goods. It felt like a hub for agricultural products from tea plantations and forests, including fresh fruits and vegetables, meats, and uniquely aromatic spices. I tried local dishes that use minimal spices but emphasize the freshness of ingredients, such as hot steamed rice served with river fish curry and local vegetables—so delicious I had to ask for seconds.
