Taste Assamese Cuisine: The Charm of Flavors from Northeast India
When talking about India, many people might think of chicken biryani, massaman curry, or crispy roti. But for me, Mr.Hotsia, who had the chance to travel deep into Assam, located in the northeast of India, the charm of the food here lies in its simplicity yet profound flavors, and a culture perfectly blended with nature.
Assam is not a large province widely known among Thais, but if you follow my travel routes, Mr.Hotsia, you will see that the local food here is as distinctive as anywhere else. The uniqueness of Assamese cuisine is the use of local ingredients such as river fish and mild local spices, making each dish balanced and easily approachable.
The Aroma of Rivers and Mountains in the Food
Assamese food is very close to nature because the geography here consists of large rivers and high mountains, resulting in fresh ingredients. For example, river fish is a main component found in many dishes. I clearly remember walking in a local market near Namchi town, where people still live simply and the food sold reflects the true local essence.
My favorite dish that I, Mr.Hotsia, tried and loved isTengaor a sour curry made from river fish. The taste of this sour curry made me feel refreshed and eager to eat more hot rice dishes.
Unique Spices and Cooking Methods
Although Assamese people use fewer spices than South Indian or Mumbai cuisine, they focus on the freshness of ingredients and simple cooking methods. Here, kaffir lime leaves, bay leaves, and local herbs like wild lemongrass are used to enhance aroma. They also use fermented soybean milk tofu called“Khar”which is a unique specialty of Assam.

Although Bengaluru is a technology city, I chose to eat chicken biryani and Assamese food mainly because the flavors were tempting and made me feel like truly experiencing the local lifestyle.
Local Markets and Life Worth Experiencing
I, Mr.Hotsia, remember when I walked through a small market in the Assam region, the scent of fresh smoked fish, fresh herbs mixed with the aroma of new steamed rice made me almost not want to leave. The market here is not just a place to buy and sell food but also the heart of the community, expressing culture and a simple way of life.
