If you ask what Mr.Hotsia wanted most to eat on this trip to India, the simple answer is “Chicken Biryani.” Not just ordinary chicken biryani, but chicken biryani in a mall in Bengaluru, also known as Bangalore, the technology capital of India. This city is not only famous for software and startups but also has an incredible variety of delicious food to try.

Bengaluru is located on the Deccan Plateau, about 900 meters above sea level. The atmosphere is quite cool compared to other Indian cities. It is also cleaner and greener than expected. You will see parks and large trees lining the streets providing shade. Even in summer, I walked around the city without an umbrella because the tree shade really helped reduce the heat, making it perfect for strolling and tasting food in malls or restaurants.

On this trip, Mr.Hotsia chose to try chicken biryani in a famous shopping mall located in the heart of Bengaluru. Eating chicken biryani in a mall feels completely different from street food. Besides cleanliness and a comfortable atmosphere, the biryani here is carefully prepared with a balanced flavor and authentic Indian spices cooked by professional chefs.

The chicken biryani here is served with large pieces of chicken marinated with spices, tender and deeply flavorful. The biryani rice is fragrant with cardamom and saffron, adding color and appeal to the dish, accompanied by dipping sauce and crispy fried shallots on top. I also ordered snacks like samosas and Indian chai, which paired perfectly.

Eating chicken biryani in a major mall in Bengaluru reminded me of the city's diversity. Although it is a technology hub, it still preserves authentic Indian culture well. Who would have thought that while the city advances in technology, the chicken biryani here remains traditional and meticulously prepared, earning my highest praise.

For those interested in traveling to Bengaluru, besides experiencing a clean and green city, there are many interesting attractions such as large parks and important sites related to technology and startups. On this trip, I didn’t visit the IT district as planned because it’s far from the city center and requires local guides. Instead, I spent most of my time tasting food and experiencing city life. The chicken biryani in this mall made my trip memorable, especially with its unique taste and genuinely friendly Indian service.
