I arrived in Kashmir at the end of winter. The weather was comfortably cool, with mist lingering over the hills. The lifestyle here remains simple and deeply connected to nature. The local market I visited was filled with the aroma of spices and the lively bustle of people buying fresh ingredients for their next meal.

Grilled goat in Kashmir is not just ordinary roasted meat but is carefully prepared with a variety of spices such as cardamom, cinnamon, cumin seeds, and Kashmiri chili powder that gives a bright red color and a mellow flavor. The goat meat is marinated thoroughly before being grilled over charcoal, which imparts a unique aroma. Importantly, the meat is tender and melts in your mouth. I tried it with hot steamed rice and a sauce made from yogurt and local herbs. It was an unforgettable taste.
