When you think of India, many probably imagine big cities like Mumbai, Bangalore, or Chennai. But this time, mr.hotsia takes you to "Assam," a state in Northeast India where the Tai Phake way of life is still fascinatingly preserved, especially in Namphake Village. The Tai community here has a unique dish called "Assam Fried Rice," where flavor and culture blend perfectly.

I traveled from Namchi, a city I have previously shared about inTraveling Namchipassing through the lush mountains and nature of this region before entering Namphake Village, hidden amidst vast rivers and forests. One thing felt from the first step is the peace and friendliness of the locals. Here, the Tai Phake people firmly preserve their Isan way of life, including language, music, and food.

"Assam Fried Rice" that mr.hotsia tasted in this small community market is different from any fried rice I've had before. They use short-grain rice resembling sticky rice, mixed with local spices, fresh vegetables, and herbs found in the area, such as Tong Tung leaves, tamarind leaves, and homegrown fresh chili. The slightly sweet and sour taste comes from fish sauce and tamarind juice, giving this fried rice a unique aroma and surprisingly balanced flavor.

While sitting and eating Assam Fried Rice among the villagers, I not only enjoyed the food but also learned the recipe passed down through generations. The Tai Phake people here pound fresh spices with mortar and pestle every meal, and I witnessed the traditional charcoal stove cooking method, filling the area with fragrant wood smoke. This experience is something you definitely can't find in big cities like Bangalore or Mumbai.

After the meal, I strolled through the community market filled with local products, including beautifully patterned handwoven fabrics, basketry, and bamboo souvenirs. There were also traditional music performances and Tai Phake dances that made me feel like I stepped into another peaceful and warm world.

My journey to Namphake Village was not easy, requiring coordination with local villagers and driving through winding mountain roads. But every kilometer was worth the experience and a great opportunity to see a different side of India that many have never known.
