I, mr.hotsia, had the chance to visit Udomxay Province, Laos, an important hub city in northern Laos, located not far from Luang Prabang, with the Nam Beng River flowing through the city center. Here, besides the natural beauty and the simple lifestyle of the locals, I also experienced something special with Ned Nuad, or mushrooms growing on bamboo roots in the tropical rainforest of Laos.

Ned Nuad (the local name I heard from villagers) is a mushroom characterized by long white whisker-like fibers extending from bamboo roots. It is not a mushroom commonly found in big city markets, but during the rainy season when I visited Udomxay’s fresh market, Ned Nuad was sold in clear piles. Locals collect these mushrooms from nearby forests, such as in Pak Ngum village, where I stayed in a homestay and closely observed how villagers harvest Ned Nuad.

If you ask me how Ned Nuad tastes, I would say you must try it stir-fried with eggs. When eating Ned Nuad, be careful not to add too much fish sauce because it will become too salty and overpower the mushroom’s aroma. Stir-fried with fresh eggs, it hardly needs any seasoning. The texture is slightly crispy, with the fragrant scent of wild mushrooms and the sweetness of eggs blending incredibly well. I once ate it at a restaurant in Pak Beng where it was overly salty, which was a pity because it masked the deliciousness.

If you visit Udomxay city, don’t miss stopping by the central fresh market. This market gathers locals from 23 ethnic groups living in Udomxay Province, such as Hmong, Mien, Phu Thai, and Akha. I, mr.hotsia, once woke up early to walk through this market to capture photos and experience the real life of the Laotian people here.

Udomxay fresh market is divided into two main zones: an open-air area selling fresh vegetables and seafood brought by villagers, and a covered area selling dried goods and local foods. Besides Ned Nuad, the market also offers fresh local vegetables, river fish, and made-to-order dishes to enjoy while strolling.

Walking through Udomxay fresh market helped me understand the lifestyle of the people here more deeply. It’s not just about buying food but also exchanging stories and preserving a strong culture in a city that might seem like just an ordinary transit point on the map.

Travel and relaxation in Udomxay city

Udomxay city is an important travel hub in northern Laos, with buses departing to cities like Luang Prabang, Pak Beng, Phongsali, and Muang Khua. I, mr.hotsia, have used the city’s bus station located downtown, easily reachable on foot from hotels without having to go outside the city like in many other Laotian towns.

If you want to taste fresh Ned Nuad after visiting the market, I recommend staying at a homestay or small accommodation in the Pak Ngum or Pak Beng communities, also in Udomxay Province. These places offer not just lodging but a chance to learn about local life and taste authentic local dishes that are hard to find in big cities.

I plan to return to Udomxay in the future to capture photos of Pak Beng and take a slow boat to Luang Prabang along the popular route for many travelers. But this time, I definitely won’t miss Ned Nuad.
