I, mr.hotsia, had the chance to explore the food in Mandalay city, and especially experiencing the local dishes in Kachin State made me feel that the flavors here are not much different from Yangon but have a unique charm that makes you fall in love and never forget.

If anyone has been to Yangon, you might be familiar with street food stalls filled with small bowls containing various dishes served with hot steamed rice to eat as you like. Mandalay is almost the same. These stalls offer nearly ten kinds of dipping sauces and chili pastes served with a variety of fresh vegetables arranged appetizingly. For those who love local food without much seasoning, just a little chili paste dip will surely take you on a comfortable culinary journey.

As for restaurants in Mandalay city, they range from small Chinese eateries to places with menus in both Burmese and English with clear prices, similar to restaurants back home. What impressed me most was the corner restaurant of the Fortune Hotel located at 31st Street, Between 82nd and 83rd, Central Mandalay. The food here is delicious, affordable, and the atmosphere is very friendly. If you visit Mandalay and want a comfortable place to dine, I highly recommend this spot.

If I were to recommend a simple way to eat in Mandalay and get the most authentic taste, I usually use the “watch the locals” technique. When I see a busy restaurant, I try sitting down and ordering what others have, or if unsure what to order, I just point to the dishes on the neighboring table. I guarantee you won’t be disappointed.

A dish I regularly order and can find in almost every country in this region is “fried rice,” called “tamin jaw” in Burmese. Some pronounce it close to “bai cha” in Khmer. Here, it’s easy to order, tasting similar to our fried rice but with a Burmese twist — fragrant with spices and garlic oil. It pairs well with curry or fresh vegetables with side dishes, perfectly completing the meal.

Another special thing I really like is Burmese draft beer, which costs about 15 baht per glass — very cheap! More importantly, it tastes better than regular bottled beer. If you see a place advertising draft beer outside, I recommend going in and trying it. It’s great for cooling down and refreshing after walking in the sun.

Exploring Myitkyina Morning Market, Kachin State

When talking about food and lifestyle in Kachin State, I recommend visiting Myitkyina morning market, located by the Irrawaddy River. This market is lively and colorful, mostly selling fish from the river and a variety of fresh vegetables.

What impressed me was the piles of fermented fish arranged like beautiful mountains and fish balls made from a special Myitkyina fish recipe. The fish meat is grated and shaped into balls, then wrapped in banana leaves or a local type of leaf. Placing the fish on fresh green leaves gives a natural and clean look. This is the unique charm of Myitkyina morning market.

What’s interesting is the way local food is prepared at this market, such as vendors mixing noodles with chili paste without gloves, seasoning boldly like locals. I tried ordering some, and the taste was balanced and moderately spicy, reminding me of traditional Thai local food that is now hard to find.

I personally stayed atIndaw Mahar Guesthousein Indawgyi town. The accommodation is modest but convenient and affordable, near the beautiful lake. Hotel meals usually include breakfast, and lunch and dinner can easily be found at roadside stalls or local eateries nearby.
