Authentic Burmese Poi Sang Long. The Mandalay morning market is not far from the Fortune Hotel where I stayed, just a two-block walk. The morning market in Mandalay is very charming, with the colors coming from buyers carrying goods on their heads in various styles. Next to the morning market is a flower market in the early morning. The Mandalay morning market has many kinds of fresh fish. I like how they prepare the fish meat cleverly; they pound the fish meat before selling, making it very colorful. In Mandalay market, there are restaurants selling traditional Burmese coffee, unlike most places where only instant coffee is served.

But in this market, they have traditional Burmese coffee, which is excellent. Besides drinking traditional Burmese coffee, I also tried a strange noodle dish called 'Kyam Noodles.' I named it 'Kyam Noodles' because the noodles are mixed vigorously but not overdone. I walked around Mandalay's morning market and saw a vendor mixing noodles with chili paste passionately by hand and then serving it to waiting customers. I thought it must be delicious, and I haven't eaten like this since my mother gave me rice mixed with mackerel when I was a child.

So I ordered a bowl immediately and requested it mixed the same way. I waited patiently because the mixing queue was long. Finally, I got to eat it, and it was delicious and unique because I got to do what the locals do. This 'Kyam Noodles' shop is in Mandalay morning market; go and try it for a new experience. Whenever I travel to any city or country, I like to walk through their morning markets to learn about the local way of life, including in Mandalay.

I went to the morning market and found a flower market here. Mandalay is a Buddhist city; every household worships Buddha and uses flowers for worship. This makes the morning market large and very interesting. There are flowers for worship placed on bicycles and motorcycles, some laid on the ground. People come to buy early in the morning. Next to the flower market is the fresh market of Mandalay. I recommend visiting this flower morning market. The atmosphere is somewhat like visiting Huong Yen city in Vietnam.

The clear difference is the way Burmese people carry items on their heads, which is strange and sometimes unbelievable that they can do it. In summary, during my stay in Mandalay, I walked the morning market and flower market for three consecutive days. I had breakfast at the market for two days, skipping hotel breakfast. I tried the very unusual Kyam Noodles. I bought round dried chili peppers at 80 baht per kilogram to eat back in Thailand. I have eaten this round dried chili in China and Yangon but never found it in Thailand, so I bought some to take home.

You can carry it on the plane without breaking any rules. I tried it and it’s really delicious. I made stir-fried chicken with cashew nuts, which was extremely tasty.
