I once went to Udon to look for Lab Ped but couldn’t find a place I liked. Today, I’m taking you to Khon Kaen first. Just a short walk into a small alley, there’s an old Isan food restaurant in a two-story traditional house with raised floors and tables set underneath. Noi Lab Ped sells many dishes, not just Lab Ped. The most ordered dishes at almost every table are Lab Ped, Som Tam, Fried Intestines, Tom Saap Duck, and crispy fried duck bones. When you come here, you must try these five dishes, not including sticky rice and beer, folks. The first dish I loved the most wasn’t Lab Ped but the crispy fried duck bones. They marinate and season it excellently, frying it until crispy so you can eat even the large bones comfortably. Eating the fried duck bones reminded me of my time in the Air Force in Ubon, where I liked grilled duck heads.
The fried dish has a slightly bitter deliciousness, similar to fried duck bones like this. But this place doesn’t grill the heads. The fried bones go perfectly with beer. This dish is a must-order and great to snack on while waiting for other dishes. The second dish is Lab Ped. Lab means minced, so the duck must be finely chopped. Pieces of duck that aren’t minced aren’t called Lab. This Lab Ped here has a mild flavor suitable for all ages and isn’t spicy. As for the tender duck meat and delicious seasoning, I don’t know the exact ingredients.
I’ve eaten a lot of Lab Ped, and this place’s is good but not the best. I think it’s a bit too mild, lacking sourness and spice. Not everyone needs the same taste for a dish; it depends on personal preference and what you’re used to eating since childhood. My third favorite dish is Lao-style Som Tam. Lao Som Tam in Khon Kaen is truly special. Some people who have never lived in Isan need a little introduction. Lao Som Tam from Ubon and Khon Kaen is very spicy. If you’re not used to this kind of heat, you definitely won’t be able to eat it.
They add handfuls of chili, making the salad bright red. If you don’t like spicy food, you can ask for no chili. But even using the same mortar without washing it will make it spicy enough to be unbearable. Even I, who like spicy food, had tears streaming down my face after eating Khon Kaen Lao Som Tam. It was so spicy I had to stop, but it’s delicious in its own way. If you come to Khon Kaen, you should try Khon Kaen Lao Som Tam. The other dishes like fried intestines and Tom Saap Duck are equally delicious. This place sells excellent fried duck intestines, preparing dozens of plates ready to serve.
They sell out constantly, and every table orders them. The Isan-style Tom Saap is already delicious, no need to say more. All these dishes go perfectly with sticky rice. If you eat them with steamed rice, you might as well not eat them at all. When you come to Khon Kaen, you must eat Khon Kaen Lab Ped and Khon Kaen Lao Som Tam to truly experience Khon Kaen.
