I couldn't find any shops in Phimai town. Finally, someone recommended visiting Sai Ngam, a tourist spot famous throughout Thailand for its ancient banyan tree roots. Almost every restaurant there serves Phimai and Korat stir-fried noodles to taste.

I was lucky to see how Phimai and Korat stir-fried noodles are made. Watch the clip below. From what I observed, the stir-fried noodles of Phimai and Korat are similar to Tha Chang style, focusing on tamarind sauce for seasoning, then stir-frying until dry. The noodles come out with a rich, intense flavor absorbed into the strands—delicious, exactly how I like it. Phimai and Korat stir-fried noodles use the same seasoning sauce but different noodles. Phimai uses Phimai noodles, while Korat has its own noodles. Both use the same sauce, but Korat noodles are chewier.
Phimai noodles are soft; I prefer Korat noodles because they are chewier. The stir-fried noodles have a sweet and sour taste. The restaurant I ate at is called Khun Or, located near Sai Ngam.
