Anyone who has tried noodles in Ubon knows many shops serve shrimp paste and fresh vegetables, similar to pho in Laos which must have shrimp paste and fresh herbs. I traveled to Ubon and found this marbled beef noodle shop. What makes it special is they serve boiled marbled beef and meatballs. It's very delicious, tender, and not tough. Dip it in a slightly bitter jaew sauce made with lac insect or a sour dipping sauce. They offer both. This shop has been open for many years and is loved by many locals in Ubon.
If you come around noon, it can be crowded and seating may be limited. This shop is located right at Wat Phonphaen Intersection. I ordered dry egg noodles with everything and boiled marbled beef with meatballs. The egg noodles didn't work well; if you want marbled beef noodles, I recommend wide or thin rice noodles as they go better together. Another thing I like is the very fresh and crunchy vegetables. I suggest trying long beans dipped in shrimp paste. Many Ubon locals enjoy it this way, including me during my 4 years living here.
