Nam Pu Mae Chaem Chiang Mai: A Must-Try Local Specialty from the Village Way of Life

If you've ever heard the term “Nam Pu” and wondered what it is, I, mr.hotsia, had the opportunity to visit Mae Chaem, a small district hidden behind Doi Inthanon in Chiang Mai province, to share an in-depth story from my real experience. Nam Pu, as the Northern people call it, is a seasoning made by boiling and simmering freshwater crabs until it becomes a thick, dark, fragrant, and creamy liquid that perfectly replaces shrimp paste and fermented fish in dishes.

Mae Chaem is a district not yet widely known to tourists but has an interesting lifestyle and culture. Especially the making of Nam Pu, which I stumbled upon by chance during my trip. I saw locals catching freshwater crabs in rice fields at night, using flashlights to carefully catch the crabs that come out to feed. These freshwater crabs are the key ingredient for Nam Pu because if the crabs are fresh, the Nam Pu will be more fragrant and delicious.

After catching the freshwater crabs, the locals boil them overnight in a large pot to extract the crab meat into the water. Then they continue to simmer it until it thickens into a jet-black Nam Pu with a unique aroma. Although the smell during boiling is quite strong and unusual at first, once the Nam Pu is cooked and cooled, the scent transforms into a gentle fragrance that enhances the flavor of Northern Thai dishes excellently.

I talked with the locals in Mae Chaem about how they use Nam Pu in their kitchens. It turns out they like to use Nam Pu as a substitute for shrimp paste or fermented fish in various dishes such as bamboo shoot curry, bamboo shoot salad, or Nam Prik Nam Pu (Nam Pu chili dip) which includes fresh roasted or dry roasted chili powder to add spiciness as desired. I personally tried the Nam Prik Nam Pu made by the locals with hot sticky rice, and I must say it was so delicious that it made me forget the usual flavors I had before.

For me, Nam Pu is not just an ordinary seasoning; it represents the lifestyle and wisdom of the Mae Chaem people passed down for hundreds of years. Nam Pu is highly nutritious, rich in calcium and vitamins beneficial to the body, which is another reason why Northern people continue to use it regularly. Moreover, Mae Chaem Nam Pu is famous in Chiang Mai and nearby areas. They package and sell it in markets and homes, making it easy for those who miss the chance to visit Mae Chaem to buy authentic Nam Pu to enjoy at home.
