Here, there is a very interesting lifestyle and culture, especially the bamboo cooking method for rice, known asBamboo Cookingwhich is the traditional way of cooking rice by the Akha people. I have never seen this method anywhere else in my travels.
Bamboo cooking starts with selecting fresh bamboo freshly cut from the forest near the village. The bamboo used must not be too old to avoid cracking easily. After preparing the bamboo, villagers put fresh rice mixed with water into the bamboo tube, then grill it over charcoal or wood fire from the forest. It takes about 30-40 minutes for the rice to cook, absorbing a unique aroma from the bamboo. This method not only preserves the rice for longer but also imparts a distinctive flavor and fragrance unique to the Akha people.
I tried bamboo-cooked rice for the first time and can say the taste is very different from regular cooked rice. The rice is soft and has a natural forest aroma unlike any other.
