I, mr.hotsia, recently had the opportunity to visit Chiang Khong District, Chiang Rai Province, a Thai-Lao border area that still preserves its natural environment and simple village lifestyle very well. Besides the beautiful Mekong River views, there is a local delicacy that many might overlook: “Chiang Khong Sausage,” which has a bold flavor clearly different from typical Northern Thai sausages.

Chiang Khong sausage is distinctive for its pork marinated with rich spices, balanced with a mildly sweet and sour taste. It’s not overly spicy but has a deep flavor and aromatic herbs.
