Khao Kan Jin, authentic Northern food that mr.hotsia must try

If you've followed my journey for a long time, you know I love to dive deep into local cuisine without superficiality. Khao Kan Jin, also known by many as Khao Niao (rice with minced pork), is one of my favorite Northern dishes. I want to seriously recommend everyone to try it—not just for its deliciousness but for the feeling of experiencing Northern culture and lifestyle through this dish.

The last time I, mr.hotsia, visited Lampang province, one of the places that still preserves traditional Northern food identity well, I tasted Khao Kan Jin at a riverside restaurant by the Wang River. It was delicious without relying on pork blood. Although some places add pork blood to enhance flavor and richness, here they make it without pork blood, resulting in a unique and smooth taste.

How to make Lampang-style Khao Kan Jin as seen by mr.hotsia

I had the chance to see the traditional process of making Khao Kan Jin myself. The first step I was interested in was squeezing pork blood mixed with fresh lemongrass leaves to remove the gamey smell (although Lampang doesn’t use pork blood, this is a traditional recipe elsewhere). Then, cooked jasmine rice is spread out to warm, mixed with a little salt, sugar, and fried garlic oil.

Next, minced pork and pork blood (if available) are added and mixed well. The mixture is then wrapped in banana leaves torn about 10 inches wide, stacked in 4 layers to make the wrap tight and leak-proof. The ends of the banana leaves are folded tightly and tied with bamboo strips similar to how Thai desserts like Khanom Tian are tied.

Finally, it is steamed in a bamboo steamer for about 30 minutes until the Khao Kan Jin is cooked, fragrant with banana leaf aroma, and the seasoning fully absorbed into the rice. This is the charm of Northern food that I, mr.hotsia, love so much because it’s not just about filling your stomach but feeling like you truly experience the Northern way of life.

Eating Khao Kan Jin by the Wang River in Lampang during my trip was very special. I remember the restaurant was located by the riverbank, with a cool breeze and the gentle sound of flowing water, making the meal even more delicious. It was a moment when I realized food is not just about taste but a complete experience of aroma, flavor, and atmosphere.

If I may add, I suggest visiting local markets in Lampang or nearby areas. Besides Khao Kan Jin being sold, you will also see other Northern dishes such as pork leg, northern chili paste, spicy soup, and Khao Soi with unique recipes from each family.

To sum up, for me, mr.hotsia, Khao Kan Jin is a Northern dish that feels like stepping back in time to experience traditional life. From the aroma of banana leaves, the softness of rice mixed with seasoning, to the atmosphere of eating by the Wang River in Lampang, this meal became a very memorable experience.
