Farmed Sturgeon Stir-fried with Chili, a signature dish from Sapa, Lào Cai Province

When talking about Sapa in Lào Cai Province, Vietnam, many people think of the magnificent terraced rice fields and the cool atmosphere all year round. But for me, mr.hotsia, my latest trip discovered another simple yet fascinating charm of Sapa: the “Sturgeon,” a fine fish carefully farmed in this area and versatile in cooking. Since I traveled all the way to Sapa, let me share my experience of eating Thai-style stir-fried sturgeon with chili here.

The sturgeon in Sapa is a freshwater fish not native to the area but imported from Russia as fingerlings. At a very cheap price of about 30 baht each, local people raise sturgeon in cold water ponds near Silver Waterfall, which is not far from Sapa town. This is what I saw with my own eyes during my visit there.

For me, trying Thai-style stir-fried sturgeon with chili in Sapa was a perfect experience. That day, while eating at a small restaurant in downtown Sapa, I craved spicy Thai food, so I asked the restaurant to prepare the sturgeon stir-fried with chili in a Thai flavor. The fish meat was tender and smooth, not as tough as usual fish. It must be stir-fried carefully to avoid overcooking because the meat breaks apart easily. But when cooked just right, this stir-fried sturgeon with chili had a fiery spicy taste just like authentic Thai food back home.

The sturgeon ponds near Silver Waterfall are only a few kilometers from Sapa town. From what I saw, the ponds are clean with a continuous water flow system, ideal for raising this cold-water fish. If you want to capture the atmosphere of the fish ponds and the beautiful waterfall, you can stop by before heading to the hill tribe village area in Sapa.

The charm of Sapa is not only its nature or diverse hill tribes but also its diverse and charming food culture, especially local dishes that blend international influences perfectly.
