This is roasted duck stuffed with leaves and herbs inside the cavity. When roasted, the flavors soak into the meat. Delicious and fragrant. This style of roasted duck is popular in northern Vietnam. After researching, I found that the leaves inside are Chinese Mắc Mật leaves, grown in southern China, northern Vietnam, and Nan Province of Thailand. In Vietnamese, it is called "Mắc mật."
