Sturgeon in Sapa is a fish farmed locally. I read that they buy sturgeon fingerlings from Russia at about 30 baht each and raise them in Sapa. On the day I was eating in Sapa, I craved Thai food, so I asked them to prepare Thai-style spicy stir-fried sturgeon. It was delicious, but the fish meat was not very chewy, so it couldn't be stir-fried for too long or it would fall apart. Overall, it was tasty and satisfied my craving for spicy Thai food.

Regarding sturgeon farming in Sapa, Lao Cai Province, I saw the fish ponds near Silver Waterfall (just a little before it). When I went to the restaurant, I ordered salmon and was already full. One fish made a feast with salad and fried skin, very satisfying. So I didn't try the sturgeon.
