They offer several types, such as Tam Bak Hung (papaya salad) or papaya salad with rice noodles (khanom jeen). The most popular dish is the “Mixed Tum,” which I ordered immediately.

The mixed tum plate here is served with hot soup in a pot with charcoal in the center. The small pot of soup contains boiled soft bones and bean sprouts, including pork blood, which adds a rich flavor. The fresh vegetables served alongside are varied, so eating it doesn’t feel greasy or heavy. They hardly use fermented fish sauce as heavily as in Thai papaya salad, resulting in a deep, authentic Lao “nua” flavor that is incredibly delicious.

Additionally, I ordered boiled eggs. They offer two types: duck eggs with developing embryos inside (which I recommend avoiding if you’re not used to it) and regular boiled chicken eggs. Grilled fermented pork sausage (moo som naem) is another dish that complements the papaya salad meal perfectly. Everything tells the story of authentic home-style food that locals in Pakse really eat, without adjusting the taste for foreign tourists.

After enjoying the tumlao, I had the chance to stroll around the main 14 Market, a large market in the heart of Pakse city. It’s a hub for local products and fresh food from the Mekong River. This market is famous for fresh fish, especially the 'pla na nu' (a local fish) that villagers sell in abundance. I also saw 'bang' or giant flying squirrels for sale. Although not many buyers, it’s a rare sight.
