Hello, I'm mr.hotsia. Today I will take you to taste the highlights of Vientiane, the capital city of Laos, full of simple charm and bold flavors that rival any other. When talking about Vientiane food, many might think of “Khao Piak,” which I have shared about inKhao Piak Vientiane articleBut today, I want to take you to enjoy heavier dishes like “boat pho” and “chicken rice” which I must say are boldly flavorful and very satisfying!

After strolling and enjoying the atmospherealong the Mekong River in VientianeAt sunset, I, mr.hotsia, started to get hungrier. This city’s charm is that despite being a capital, it still maintains a slow life vibe. The newly completed riverside road along the Mekong has become a favorite spot for locals and tourists who enjoy walking, exercising, or chilling while enjoying the breeze and view.

But when night falls, I need to recharge with a full meal. In Vientiane, I stumbled upon a boat pho noodle shop in a small alley near the morning market. The shop isn’t fancy, but the aroma of the broth and spices was irresistible. I ordered a large bowl of boat pho with fresh beef and beef meatballs, plus plenty of fresh vegetables. Cilantro and green onions added extra color, making the bowl look especially appetizing. The broth was rich and balanced, not too spicy, with authentic Vietnamese spice aromas that truly awakened my appetite.

For those who like bold flavors, there are chili, lime juice, and fish sauce to add as you wish. I, mr.hotsia, finished the entire bowl of boat pho. The taste was incredibly satisfying! It’s a unique noodle experience in Laos that you shouldn’t miss.

After enjoying the boat pho, I didn’t stop there because the chicken rice here is just as amazing. The chicken rice shop I found is a small roadside place in the city center, near my accommodation at Pomprasert Hotel (which I recommended inVientiane travel article). Lao chicken rice differs slightly from ours in that the chicken is tender and firm, served with fragrant, perfectly cooked oily rice that isn’t mushy. The dipping sauces come in both sweet and sour-spicy versions that pair perfectly with the chicken.

I, mr.hotsia, sat eating while watching people pass by in the nighttime of Vientiane, feeling the simple yet warm lifestyle. This shop is one of many that make Vientiane’s charm different from other capitals I’ve visited.
