Pho Luang Prabang differs from the Vietnamese pho many are familiar with because it has a rich, mellow broth fragrant with local herbs like galangal, lemongrass, and kaffir lime leaves. The clear broth is full of deep flavors. The noodles are thin, chewy, and tender. The beef or chicken is simmered to just the right tenderness. Fresh and pickled vegetables served at the Luang Prabang fresh market are so fresh you can almost eat them raw.
I enjoy sitting and eating pho at small roadside shops that are not crowded with tourists. These are usually family-run shops where the sellers speak gently like neighbors.
