They wondered about the differences between Lao papaya salad, Thai papaya salad, and papaya salad with crab. I explained that Lao papaya salad uses fermented fish or pla dak, Thai papaya salad includes peanuts and yardlong beans, and papaya salad with crab can be any style with crab added, such as papaya salad with fermented fish and crab (Lao style) or Thai style with crab. There are also unique variations like grilled pork papaya salad which includes grilled pork and papaya.

When I arrived in Pakse and had to stay and work here for several days, I craved Lao papaya salad from Pakse. So I asked locals which Lao papaya salad shop was popular among Pakse people. They told me about a shop in the alley next to the Pakse Forestry Office, just past the Sabai Dee Song guesthouse, in the alley on the right side. I went to try it because I wanted to know what authentic Pakse Lao papaya salad was like. The shop is under a raised house with the space below used as a papaya salad shop. From talking, I learned the seller's name is Khao (female).
The shop has been open for four years and is very popular among Pakse locals. Recently, some Thai customers have started coming too. For Pakse papaya salad, they sell it as a set with hot soup served in a pot with charcoal in the center, containing boiled soft bones, bean sprouts, and pork blood. The papaya salad here is all Lao style. I didn’t ask if they had Thai style. You can choose, for example, papaya salad with papaya or papaya salad with rice noodles (or khanom jeen). The most popular is the mixed papaya salad. I ordered one set of mixed papaya salad, priced at 15,000 kip or about 45 baht. There are two types of eggs here; generally in Laos, if you see eggs for sale, duck eggs are fertilized eggs with developing wings and feathers inside, which locals like to eat. If you don’t know how to eat them, don’t order them by mistake. Chicken eggs are just regular boiled eggs. Besides eggs, I also ordered grilled fermented pork (naem moo). I tasted it once. The papaya salad here in Pakse is delicious with many vegetables, so you don’t have to worry about calories. It’s not overloaded with fermented fish sauce, very flavorful, spicy, and truly tasty.
When I ate there, another table had four Pakse locals enjoying their meal. This shows the shop is really good. Oh, I almost forgot, all food in Laos usually has monosodium glutamate added by the spoonful. If you don’t want it, just tell them “bo ao paeng nua der” (no MSG please). Mr.hotsia December 2010. My lunch today included sticky rice but it wasn’t brought yet. The best dish is the papaya salad, Pakse Lao style. It’s truly delicious.
