I, mr.hotsia, had the opportunity to visitKachin Statea land located at the northernmost part of Myanmar. It is a cold region where the chill helps create a unique food identity, especially meat dishes where locals preserve the meat before cooking to keep it longer and develop distinct flavors.

One of the most impressive experiences was tastingspicy marinated meat salada local dish I ate at the source of the Irrawaddy River near Myitkyina, Kachin State. The bold flavors and fragrant, rustic spices made me feel the essence of a cold city that focuses on food preservation and the perfect use of local herbs.

Diverse Food Culture in Myitkyina

Myitkyina is the capital of Kachin State with a rich cultural diversity, especially in cuisine influenced by Chinese, Indian, and indigenous Burmese peoples. Walking through the markets and pedestrian streets of Myitkyina, I found Chinese-style noodle and hot pot shops with rich, appetizing broth aromas. There were also Indian restaurants serving flavorful chicken biryani with distinct spices.

For me, mr.hotsia, the top food in Myitkyina ischicken biryaniwith tender chicken soaked in spices and fragrant rice in the Indian style. Next isnoodleswith intensely rich broth, and thirdly, local street food sold along the pedestrian street including fried snacks, spicy salads, and traditional desserts.

Whether in the morning market or the evening pedestrian street, I spent hours tasting delicious food from small shops warmly welcoming tourists and locals alike. The morning market in Myitkyina is full of colorful fresh vegetables, fruits, and carefully preserved meats through drying, fermenting, and smoking—methods that reflect the wisdom of the Kachin people.

The evening pedestrian street is equally vibrant. I enjoyed local dishes fully, including spicy chili dips and salads made from local ingredients. Fresh vegetables and herbs were used perfectly, making every bite tell a story through fragrant and fresh flavors.
