If you think "Garlic Dancing" is the name of a dish or a special menu, I must say you are half right. Actually, it is a performance and a way of eating garlic with rhythm and moves similar to dancing. I first saw it in a small community market in Mandalay in the evening. The dancing garlic grilled over charcoal with a fragrant aroma mixed with the chatter of people in the market created a warm and lively atmosphere beyond words.

I sat down at a small roadside food stall. The owner, a cheerful local, used fresh garlic cooked with perfectly blended spices, then made it "dance" on the hot charcoal grill. The garlic, charred to perfection, had a slightly sweet and salty taste from the seasoning and a unique aroma, an experience hard to find elsewhere.

If you visit Mandalay, I recommend traveling to Pyin Oo Lwin, a city with cool weather and beautiful flower gardens. The journey from Mandalay to Pyin Oo Lwin takes about 1-2 hours. The bus stops along the way, giving you a chance to taste local food and use clean restrooms.
